Ingredients
- 3/4 CUP SUGAR, 1/3 CUP PART FLOUR AND PART CORNSTARCH, 1/8 TEASPOON SALT, 1 TEASPOON VANILLA, 2 TABLESPOONS BUTTER, 1 1/2 CUP REGULAR MILK AND 1/2 CUP CANNED MILK, 2 EGGS, SEPERATED, 1 CUP COCONUT.

Step 1
COMBINE BUTTER, SUGAR, SALT, FLOUR AND EGG YOLKS WHICH HAVE BEEN WELL BEATEN. ADD MILK SLOWLY STIRRING CONSTANTLY UNTIL MIXED WELL. I USE A WISK, PLACE ON HEAT, COOK, STIRRING CONSTANTLY UNTIL THICK AND SMOOTH. REMOVE FROM HEAT, ADD COCONUT AND VANILLA. POUR INTO A BAKED PIE CRUST AND COVER WITH MERINGUE MADE FROM THE EGG WHITES, WHICH HAVE BEEN STIFTLY BEATEN WITH THE 4 TABLESPOONS OF SUGAR. BAKE IN 300 DEGREES PREHEATED OVEN UNTIL MERINGUE IS NICE AND BROWN. YOU CAN USE WHIPPED CREAM OR COOL WHIP INSTEAD OF THE MERINGUE.
