Mom's Strawberry Pie

Ingredients

  • • 1 cup strawberries – sliced
  • • 1 cup water
  • • 3/4 - 1 cup sugar for gel plus
  • 1/2 cup sugar
  • 2 1/2 Tablespoons corn starch
  • 1 9 inch baked pie shell
  • 4 ounces cream cheese brought to room temperature
  • 1 quart of strawberries, washed, patted dry and the stems cut off
  • whipped cream or can of whippo

Preparation

Step 1

Boil the cup of strawberries, sugar and water for 5 minutes. Stir through a mesh strainer over a bowl to remove seeds and pulp. Throw away stuff left in the strainer and put the strained strawberry mixture back in the saucepan.
Mix 2½ tablespoons cornstarch with ¼ cup sugar and stir well. Add to the strawberry mixture and stir. Put back on the burner and boil until thickened. Stir often. COOL.

Gently spread 4 ounces of softened cream cheese in the bottom of a baked 9” pie shell.

Line crust with whole strawberries and cut berries to fill all of the spaces.

Pour cooled gel over the berries and refrigerate.

Serve with whipped cream.
