Ingredients

  • 2 T butter
  • 1/4 large onion sliced
  • 2 minced ribs celery with leaves
  • 1 1/2 C chicken broth
  • 1 C mashed or riced cooked cauliflower
  • 1 C light cream (Fat Free half and half)
  • Season to taste
  • 1 tablespoon chopped parsley
  • A light grating of nutmeg
  • A pinch of coriander

Preparation

Step 1

Heat butter and cook onion and celery until soft, about 4 minutes. Add chicken broth and mashed or riced cooked cauliflower. Heat to the boiling point. Add light cream. Do not let the soup boil after adding the cream. Season to taste and serve. Top with grated cheddar cheese.
