Ingredients

  • 3 cups prepared tomatoes (about 2 1/4 lb fully ripe)
  • 1 1/2 tsp grated lemon rind
  • 1/4 cup lemon juice
  • 6 1/2 cups sugar
  • 1 bottle Certo fruit pectin

Preparation

Step 1

Scald, peel and chop tomatoes. Bring to a boil and simmer 10 minutes. Measure 3 cups of tomatoes into a large saucepan. Add lemon rind and juice. Add sugar to measured fruit, bring to a boil and boil hard 1 minute, stirring constantly. Remove from heat. Stir in Certo. Stir and skim for 5 minutes to cool to prevent floating fruit. Ladle into sterilized jars.
