Baked Eggplant with Meat Stuffing

Ingredients

  • 1 medium eggplant
  • 1 Tbsp chopped onion
  • 1 Tbsp chopped green pepper
  • 1 Tbsp butter
  • 1/2 lb ground beef
  • 1/2 cup soft breadcrumbs
  • 1/2 tsp salt
  • 1/8 tsp nutmeg
  • 1 egg, lightly beaten

Preparation

Step 1

Cut eggplant in half and cook in salted water. Scoop out pulp and chop, leaving 1/2" thick shell.
Cook onion and pepper in butter until translucent. Add meat, cook, stirring, until brown. Add eggplant pulp, bread crumbs, salt and nutmeg, mix well. When cool add beaten egg. Fill shell and put in lightly greased pan. Bake at 350° for 45 minutes.
