Ham Split Pea Soup

Need to warm up? Try this excellent Ham Split Pea Soup, it's super easy to prepare with only 15 minutes of prep work. Serve with your favorite crusty bread and enjoy!
Ingredients
- 1 meaty ham bone
- 1 tablespoon butter
- 3 cups water
- 32 ounces chicken broth
- 1 large onion, chopped
- 1 pound package split peas
- 1 bay leaf
- 2 celery ribs, sliced, leaves included
- 3 carrots, sliced
- 1 1/2 cups ham, diced
- 1 tablespoon parsley
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon dried thyme
- Salt and pepper, to taste
- 2 medium potatoes, diced (optional)

Preparation
Step 1
In large pot, put ham bone, butter, water, chicken broth & onion; simmer for approximately 30 minutes.
Add split peas and cook another 30 minutes stirring occasionally so peas don't stick to bottom of pot.
Add bay leaf, celery, carrots, ham, (potatoes if desired) parsley, rosemary & thyme cooking to desired consistency, about another 90 minutes, stirring often.
Salt & pepper to taste.
