  • 1 can Mexicorn or Corn Niblets
  • 1 can black beans, drained and rinsed
  • 1/2 Bermuda onion, diced
  • 2 tomatoes, seeded and diced
  • 2 avocados, diced
  • 1 package Good Seasons Italian Dressing, dry
  • 1/4 cup olive oil
  • 1/8 cup white wine or lemon juice

I usually add the avocado last, after everything else has been mixed together, because it gets mushy if you stir the avocado too much.
