Ingredients
- 1 TB olive oil
- 1 lb ground chicken
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/4 cup hoisin sauce
- 2 TB soy sauce
- 1 TB rice wine vinegar (aka rice vinegar)
- 1/2 tsp ground ginger
- 8 oz can sliced water chestnuts, chopped
- 1 green onions, thinly sliced
- Kosher salt & black pepper
- 1 head butter lettuce

Preparation
Step 1
Heat olive oil in a large pan over medium-high heat. Add ground chicken & cook until browned, making sure to crumble the chicken as it cooks; drain excess fat. Stir in the onions, cooking until soft. Add garlic, hoisin sauce, soy sauce, rice wine vinegar, & ginger; cook for a couple minutes. Stir in chestnuts & green onions; cook until tender, about 1-2 minutes. Season with salt & pepper. Spoon chicken mixture into the center of a lettuce leaf, taco-style.
