Spinach Especiale

Ingredients

• 2 10 oz packages fresh spinach
• 4 hard boiled eggs quartered
• crumbled bacon
• Mandarin oranges
• pecans
• mushrooms
• Dressing
• 1 C veg. oil
• 5 T wine vinegar
• 4 T sour cream
• 1 t salt
• 1/2 t dry mustard
• 2 T sugar
• ground pepper
• 2 t minced parsely
• 2 cloves garlic pressed

Step 1

Wash and spin dry the spinach, in a large salad bowl combine spinach, eggs, bacon, oranges, pecans and mushrooms.

In a small bowl combine dressing ingredients and whisk to combine (this should be done 6 hours before using)
