Quick Chicken-Squash Toss

Ingredients
- 1/4 c butter or margarine
- 2 T lemon juice
- 1 t dried basil
- 1 t dried oregano
- 1/2 t dried thyme
- 1 pound boneless chicken breasts cut into bite-sized pieces
- 1 medium yellow squash cut into julienne strips
- 1 medium zucchini cut into julienne strips
- 1 small green pepper cut into julienne strips
- 1 small sweet red pepper cut into julienne strips
- 1/2 c chopped pecans
- 1/4 t salt
- 1/8 t pepper
- hot cooked rice optional

Preparation
Step 1
Combine first 5 ingredients - butter, lemon juice, and herbs in 1-cup glass measure. Microwave at high 1-2 minutes until butter is melted.
Place chicken in shallow casserole and brush with half of butter mixture. Cover with lid or plastic wrap and microwave at high for 4-5 minutes, turning casserole once.
Add next 7 ingredients; pour remaining butter-herb mixture over vegetables. Cover again and microwave on high turning casserole once - 4 more minutes or until vegetables are tender crisp. Stir and let stand 5 minutes before serving.
Serve over rice if desired.
