Ingredients

  • 1-1/3 c flour, divided
  • 1/4 c powdered sugar, plus more for dusting
  • 1/8 t salt
  • 1/2 c unsalted butter, thinly sliced at room temp
  • 1-1/2 c sugar
  • 1 T lemon zest, plus 1/2 c fresh lemon juice
  • 4 eggs

Step 1

Preheat oven to 350. Lightly grease an 8" square pan and cross cross pieces of foil or parchment paper making sure 2" hang over each side. Lightly grease and flour foil.
Whisk together 1 cup flour, powdered sugar and salt in large bowl. Add butter and stir to combine. Knead until a smooth dough forms. Crumble into prepared pan and press gently into an even layer. Freeze 15 minutes.
Bake crust on center rack for 15-20 minutes until golden brown. Remove and set aside.
Whisk together remaining 1/3 cup flour, sugar, lemon zest, juice and eggs in large bowl until smooth. Pour mixture over warm crust. Return to oven and bake until filling is lightly browned, 20-25 minutes.
Run small sharp knife around inside edges of pan to loosen pastry. Cool in pan on a wire rack for 30 minutes.
Lift foil "handles" to remove from pan. Place on rack to cool completely, about 30 minutes. Cut into 9 equal squares. Peel off foil. Before serving, sift powdered sugar over bars.
