Apricots in cardamom syrup

Ingredients
- 1 2/3 cups dried apricots
- 3 Tbsp superfine sugar
- 3 Tbsp slivered, blanched almonds
- 1/2 inch piece of ginger, sliced
- 4 cardamom pods
- 1 cinnamon stick

Preparation
Step 1
1. Soak the apricots in 3 cups of water, in a large saucepan, for 4 hours or until plumped up.
2. Add the superfine sugar, almonds, ginger, cardamom pods, and cinnamon to the apricots and bring slowly to a boil, stirring until the sugar has dissolved. Reduce the heat to a simmer and cook until the liquid has reduced by half and formed a thick syrup. Pour into a bowl, then refrigerate. Serve in small bowl.s
