Ingredients

  • 1/3 c brown sugar
  • 2 tsps. ground cinnamon
  • 2 Granny Smith apples, peeled and chopped
  • 1/2 c butter, room temp.
  • 2/3 c sugar
  • 2 eggs
  • 1 1/2 tsps. vanilla
  • 1 1/2 c flour
  • 1 3/4 tsp. baking powder
  • 1/2 plus 1 tbsp. milk
  • 1/2 c powdered sugar

Preparation

Step 1

Preheat oven to 350, spray a loaf pan with spray. Set aside
In a small bowl combine brown sugar with 1 tsp. cinnamon
In another bowl combine diced apples with remaining 1 tsp. cinnamon stir to mix set aside
In a large bowl cream together the butter & sugar. Beat eggs in one at a time until completely mixed, add vanilla & mix
In a medium bowl whisk together flour and baking soda
Add 1/2 c milk & mix until smooth
Add flour and baking soda mix to the butter mixture and stir until well blended
Pour 1/2 of batter into prepared loaf pan. Layer 1/2 of the apple mixture on top of the batter, followed by the remaining apples & brown sugar mix.
Lightly press the apples in the batter and swirl the brown sugar between the apple chunks
Bake for 50 to 60 minutes. Allow to cool 15 minutes on a wire rack before removing from pan
While the bread cools prepare the glaze in a small bow combine powdered sugar with 1 tbsp. milk mix until smooth then drizzle over cool breadl
