Apple Coffee Cake

Ingredients
- 2/3 cups unsalted butter, chopped
- 1 cup superfine sugar
- 2 eggs, lightly beaten
- 1 tsp vanilla
- 1 1/2 cups self-rising flour, sifted
- 3/4 cup vanilla yogurt
- 1 granny smith apple, peeled, cored and thinly sliced
- 1 tsp ground cinnamon

Step 1
1. Preheat the oven to 350 degrees F. Grease a deep, 8 inch round cake pan and line the bottom with waxed paper. Beat 1/2 cup of the butter and 3/4 cup of the sugar with an electric mixer until light and creamy.
2. Gradually add the beaten egg, beating well after each addition until combined. add the vanilla. Fold in the flour, then the yogurt and stir until smooth. Spoon the mixture into the prepared pan and smooth the surface.
3. Arrange the apple slices evenly over the mixture in a circular pattern, starting in the center. Sprinkle with the cinnamon and the remaining sugar. Melt the remaining butter, then drizzle over the top.
4. Bake for 1 hour or until a skewer comes out clean when inserted into the center of the cake. Leave in the pan for 30 minutes before un holding and setting on a wire rack to cool. If desired, combine a little extra cinnamon and sugar and sprinkle over the apples.
