Cajun Steak Fettuccine

Ingredients

  • Herb Rub:
  • 2 lbs boneless sirloin steak
  • 1 1/2 tsp fennel seed, crushed
  • 2 tsp oregano
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 /tsp ground red pepper
  • Fettuccini:
  • 1 lb fettuccine, cook as per pkg instructions
  • 2 Tbls butter
  • 1/4 C minced garlic ( about 6 cloves)
  • 1/2 C Parmesan cheese, grated (or Asiago)
  • 1/2 red onion, finely chopped

Preparation

Step 1

Combine fennel seed, oregano, paprika, salt, pepper and red pepper in a small bowl, mix well.

Sprinkle seasoning on both sides of meat and rub into the surface.

Place steak on grill over medium-high heat. Grill 22-26 minutes for medium rare to medium degree of doneness turning once.

Transfer the steak to a cutting board and allow to stand 3-5 minutes.

Slice the meat across the grain into thin strips.following package instructions, drain well.

Melt butter in a skillet, add garlic and red onion, cook until tender.

Put pasta in a large low sided bowl, pour butter mixture over the top, mix well.
Sprinkle cheese over the top, toss once more, then top with steak strips.
