Pecan Glazed Ham with Drop Biscuits & Green Beans

Ingredients

  • For Ham:
  • 1 cup brown sugar
  • 1/4 cup finely chopped pecans
  • 2 tablespoons melted butter
  • 1 tablespoon Chinese five-spice powder
  • 1 (12-pound) whole cooked ham
  • 2 medium onions, quartered
  • 2 cups water, adding 1/4 to 1/2 cup more if required during cooking
  • For Biscuits:
  • 4 cups all-purpose flour
  • 2 tablespoon baking powder
  • 2 pinches of sugar
  • 2 pinches of salt
  • 10 tablespoons cold butter
  • 2 1/2 cups milk
  • For Green Beans:
  • 3 tablespoons butter
  • 3 garlic cloves, minced
  • 1 1/2 pounds trimmed string beans
  • salt, to taste
  • freshly ground black pepper, to taste

Preparation

Step 1

Make Ham:
Preheat oven to 350 degrees. In a small bowl, mix together brown sugar, pecans, Chinese five-spice powder. Use your hands to rub mixture all over ham.

In a heavy, large roasting pan, scatter onions. Pour water into pan, then place ham on top of onions. Roast until glaze glistens and turns a rich brown, about 1 hour and 40 minutes. As ham roasts, check occasionally to make sure water hasn’t evaporated. If pan is dry, add ¼ to ½ cup more water to pan. Once ham has cooked, remove from oven and Increase oven temperature to 400 degrees. Let ham rest on a cutting board at least 20 minutes. If cooking juices in pan are too thin to be drizzled over meat like a gravy, set roasting pan on stove over medium-high heat and cook to reduce liquid to a syrupy consistency. Reserve pan juices for later use.

Meanwhile, Make Biscuits:
In a large mixing bowl, sift together flour, baking powder, sugar and salt. Add cold butter and use fingertips to mix until butter mixes evenly with flour and forms small pellets. Stir in milk until dough comes together and is mostly smooth. Drop large spoonfuls of dough onto a large baking sheet, leaving about 2 inches between biscuits. Bake until biscuits are cooked through, airy and golden, 10-12 minutes.

Meanwhile, Make Green Beans:
Combine butter and garlic in a large serving bowl. Bring a medium pot of salted water to a boil over high heat. Add string beans to pot and boil until bright green and al dente, about 3 minutes. Strain beans, toss dry and, while beans are still hot, add them to bowl with butter and garlic. Toss until butter melts. Season with salt and pepper to taste.

To serve, slice ham, then top with pan sauce and onions. Serve with hot biscuits and green beans.
