Gnocchi with Sausage and Broccoli Rabe

Ingredients

  • 8 oz store bought fresh potato gnocchi
  • 2 tbsp. olive oil
  • 4 oz raw Italian sausage casings, removed
  • 5 1/2 oz broccoli rabe, roughly chopped (about 1/2 bunch)
  • 2 tsp chopped garlic (about 2 garlic cloves)
  • 1/4 cup unsalted butter, at room temp
  • 2 tbsp. shredded pecorino romano cheese
  • 1 tsp crushed red pepper
  • 1 tsp freshly ground black pepper

Preparation

Step 1

cook gnocchi according to package directions in a large pot of boiling salted water. drain gnocchi, reserving 2 tbsp. cooking water. set aside.

heat olive oil in a large skillet over medium high heat. add sausage, and cook, stirring often, until fat has rendered and meat is just cooked through, about 3mins. add broccoli rabe, and cook; stirring often, until just slightly wilted, about 1mins. add chopped garlic, and cook, stirring often until garlic is golden about 1mins.

remove skillet from heat; stir in butter and reserved cooking water. add cooked gnocchi and toss until evenly coated.

Stir in pecorino, crushed red pepper and black pepper. season to taste with salt and more black pepper. serve immediately.
