Classic Old Fashioned Macaroni Salad

Ingredients

  • Dressing:
  • 1/2 cup mayo
  • 2 tablespoons of pickle juice or vinegar - I like pickle juice
  • 1 tablespoon sugar
  • 1 tablespoon spicy brown mustard
  • 1/2 teaspoon kosher salt
  • Salad:
  • 1 1/2 cups dry elbow macaroni
  • 1 teaspoon olive oil
  • 1 cup chopped sweet onion
  • 1/4 cup chopped celery
  • 1 (2 oz) jar pimentos, drained
  • 1/4 cup pickle relish
  • 1/4 cup pickle juice
  • Salt and pepper to taste
  • I add Slap ya momma's
  • Chopped boiled egg
  • Cubed cheese

Preparation

Step 1

Mix dressing together and set aside. Cook paste according to package directions. Drain, rinse and drizzle with olive oil. Put in bowl. Add other ingredients and then dressing. Mix well. Refrigerate at least 2 hours. Add mayo and or pickle juice if needed when ready to serve.
