Mixiquense Salsa - Chipotle, Tomato and Peanut

Ingredients
- 3 dried chipotle chiles, roasted
- 1 oz white onion, thinly sliced
- 2 garlic cloves, peeled
- 1/4 cup peanuts, peeled and chopped
- 1/2 lb ripe tomatoes
- 1/4 tsp freshly ground cinnamon
- 1/8 tsp freshly ground clove
- 1/4 tsp freshly ground marjoram
- 1 Tbsp olive oil
- 1/2 tsp salt
- 1/2 Tbsp lemon juice

Preparation
Step 1
1. Place the roasted chiles in a bowl and cover with water. Let soften 15 minutes.
2. Remove the stems and seeds. Grind the chiles, 1/2 cup of water, the onion, garlic and peanuts into a smooth paste, in either a molcajete or food processor.
3. Add the tomatoes and the rest of the ingredients and grind until the mixture is coarsely pureed. Season to taste with salt and then set aside.
