Asian Chicken Spinach Salad

- SALAD:
- 2 bags fresh spinach
- red,yellow,orange peppers sliced into strips
- 3 portabela mushrooms,cleaned
- 3 cloves garlic
- salt pepper
- pine nuts
- cherry tomatoes
- 3 chicken breasts
- DRESSING:
- 1/3 cup oil
- 2 tbsp. soy sauce
- 2 tbsp. rice vinegar
- 3 tbsp. sugar
- 1 garlic clove,crushed
- 1/4 tsp. fresh pepper

Step 1
1. Prepare mushrooms; sprinkle mushrooms caps with salt,pepper,and sliced garlic and broil on high for 5 minutes. Allow to cool then slice into long strips.
2. Prepare marinated chicken;In a small bowl whisk 1/4 cup dijon mustard,1 cup red wine vinegar, 2 tsp. salt,and 2 tsp. black pepper. Add 1 cup olive oil, and 4 scallions sliced.Blend with an immersion blender until combined and thickened. Place marinade and chicken in a ziplock bag. Marinate at least 2 hours. Remove marinade and grill about 4 minutes per side.
3. Combine all dressing ingredients.
4. Place spinach, peppers, and tomatoes in a large bowl and mix. Add mushrooms and chicken on top. Sprinkle on pine nuts. Pour on dressing just before serving.
