Grain-Free Cauliflower Crust Pizza

Ingredients

  • 1 small to medium sized cauliflower (2-3 cups processed)
  • 1/4 teaspoon salt
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 cup shredded parmesan
  • 1/4 cup mozzarella
  • 1 egg
  • 1 tablespoon almond meal (optional)

Step 1

Preheat oven to 450 degrees with a pizza stone inside to get nice and hot. On a cutting board place a large piece of parchment paper and spray it with cooking spray.

Cut of the cauliflower florets (avoid as much stem as possible)and pulse in the food processor until it's "powdery." Place in a microwave safe bowl, cover and heat for 4 minutes. Allow cauliflower to cool, then wrap in cheesecloth and wring out as much of the water as possible (less water = more crispy crust). Dump cauliflower into a large bowl and add remaining ingredients. If the amount of cauliflower you end up with is closer to 2 cups rather than 3 add the almond flour.

Once mixed together, use your hands to pat out the crust into a 10-12 inch circle on the parchment paper. "Dough" should be about 1/4 inch thick. Slide the parchment paper onto the pizza stone in the oven and bake for approximately 8-11 minutes. Add your toppings and place back in the oven for another 5-7 minutes.

Allow to cool slightly before cutting and serving.
