Ana's Garbanzo Soup

Ana got this recipe from Annie Gonzalez, another filipina-espanola. Hard boiled eggs can also be added at the end.

Ingredients
- 1 package dried garbanzos
- 1 large sausage, chopped
- 2 onions, sliced
- 3 cans beef broth
- 2 cups water
- 1 potato diced
- 1 bag spinach
- 3 bay leaves
- 2 garlic cloves, diced
- Chopped parsley
- Dash cumin & paprika
- 3 tb olive oil
- S & P to taste

Preparation
Step 1
1. Soften garbanzos overnight following instructions on package.
2. Put all in a pot (except spinach) and cover half way. Simmer for about 1 hour or until garbanzos are soft.
3. Add spinach and cook 1/2 hour more.
If desired, add chopped hard boiled eggs.
