German Potato Salad

Ingredients
- 5 lbs. Red Potatoes, cooked w/skins ON
- 1/2 lb. Bacon, cut up
- 1 TBSP. Salt
- 1 tsp. Pepper
- 1 tsp. Celery Seed
- all 3 above is approximate/season to taste
- 1 Large Onion, diced (I chop this pretty small)
- 8 Eggs
- 1 1/2 Cups of Sugar
- 1/2 Cup of Apple Cider Vinegar

Preparation
Step 1
Cool potatoes to room temp, remove skin and dice. Fry bacon until crisp. Let drippings and bacon cool to room temp. Add salt, pepper, celery seed and onion to diced potatoes. Mix eggs, sugar and vinegar in bowl. Just before serving, pour dressing mixture into skillet with bacon and drippings. Cook over medium heat, stirring until thickened. (be careful the eggs don't get cooked) Pour over potato mixture. Serve immediately.
