Ingredients
- 1 - 16 oz. bag of Frozen White Shoepeg Corn
- 1 - 8 oz. Package of Cream Cheese - microwave to soften
- 1/4 cup Butter - microwave to soften
- 1/2 cup - 1 cup Monterey jack / Colby cheese (any mild cheese will do)
- 2 tablespoons Chopped Pickled Jalapeno Peppers
- 1 tsp Cumin
- Salt & Pepper if needed
- Fresh Cilantro if desired
- Tortilla Chips

Preparation
Step 1
Cook frozen corn approx. 3 minutes in microwave, drain.
Combine Corn with Butter & Cream Cheese, stirring till blended.
Add Cumin & Jalapeno Peppers to taste.
Mix in 1/2 cup of Monterey Jack / Colby Cheese till blended.
Season with Salt & Pepper if desired.
Sprinkle with additional Monterey Jack / Colby Cheese on top.
Warm in Oven at 350 degrees for 20 - 30 minutes till cheese melted to your desire on top.
Serve Warm or Room Temperature with Tortilla Chips.
Add "Fresh" Cilantro on top if desired.
