Spicy Corn Dip

  • 1 - 16 oz. bag of Frozen White Shoepeg Corn
  • 1 - 8 oz. Package of Cream Cheese - microwave to soften
  • 1/4 cup Butter - microwave to soften
  • 1/2 cup - 1 cup Monterey jack / Colby cheese (any mild cheese will do)
  • 2 tablespoons Chopped Pickled Jalapeno Peppers
  • 1 tsp Cumin
  • Salt & Pepper if needed
  • Fresh Cilantro if desired
  • Tortilla Chips



Step 1

Cook frozen corn approx. 3 minutes in microwave, drain.

Combine Corn with Butter & Cream Cheese, stirring till blended.

Add Cumin & Jalapeno Peppers to taste.

Mix in 1/2 cup of Monterey Jack / Colby Cheese till blended.

Season with Salt & Pepper if desired.

Sprinkle with additional Monterey Jack / Colby Cheese on top.

Warm in Oven at 350 degrees for 20 - 30 minutes till cheese melted to your desire on top.

Serve Warm or Room Temperature with Tortilla Chips.

Add "Fresh" Cilantro on top if desired.
