  • 12 oz. raw cranberries
  • 1 cup sugar
  • 8 oz. crushed pineapple,
  • 1/2 cups chopped walniuts
  • 2 cups mini marshmallows
  • 1/2 cup sugar
  • 8 9z. cream cheese , room temp
  • 2 cups heavy whipping cream



Step 1

In food processor, combine sugar, cranberries, crushed pineapple and chop coarsely. (I
had to do it in 2 batches in my mini processor.) Do not let it become shy. Cover and refrigerate for a least an hour.

In medium size bowl, add 1/2 cup sugar to cream cheese and beat until smooth. Add the heavy whipping cream and continue beat with the cream cheese until stiff peaks form. Add chopped walnuts. Fold cranberries and marshmallows into the cream mixture. Cover and refrigerate at least 4 hours or overnight.
