Ingredients
- 3/4 cup vegetable oil
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla
- 2 cups flour
- 3/4 tsp baking soda
- 3/4 tsp cinnamon
- 1/2 tsp salt
- 1 1/2 cups diced apples
- 1/2 cup raisins
- 1/2 cup chopped walnuts

Step 1
Preheat oven to 400°. Grease 12 muffin cups.
In large bowl, beat oil and sugar with electric mixer for two minutes. Add eggs and vanilla, beat 1 minute.
In another bowl, stir together flour, baking soda, cinnamon, and salt. Add dry ingredients to oil mixture, stir just to combine. Stir in apples, raisins, and nuts.
Spoon batter into muffin tins, bake 20-25 minutes or until a cake tester comes out clean.
Remove muffin tin to wire rack, cool 5 minutes before removing muffins from tins. Finish cooling muffins on rack.
