Roasted Salmon with Citrus Ginger Aloli

Ingredients

  • 2 oranges
  • 3 Tsp olive oil
  • 2 Tsp fresh lime juice (1 large lime)
  • 2 Tsp chopped fresh rosemary
  • 4 cloves garlic, smashed & peeled, plus 1 tsp minced garlic
  • 1/2 tsp salt
  • 1 Tsp plus 1 tsp peeled, finely chopped fresh ginger
  • 1/2 tsp black pepper
  • 2-1/2 lb salmon filet in one piece with skin on
  • 1 cup mayonnaise
  • 1 tsp Dijon mustard

Preparation

Step 1

1. Zest 1 orange, then juice. Set aside 1-1/2 tsp zest & 1 Tsp juice.
2. Whisk remaining orange juice & zest, oil, lime juice, rosemary, garlic cloves, salt, 1 Tsp ginger & 1/4 tsp pepper.
3. Place salmon in a baking dish skin side down. Pour marinade on top.
4. Cover & refrigerate at least 1 to 4 hours.
5. Whisk mayonnaise, mustard, minced garlic, 1 tsp ginger, reserved zest & juice, 1/4 tsp pepper & cover & refrigerate until ready to use.
6. Heat oven to 500 degrees.
7. Cut remaining orange into 1/8 inch slices. Remove & discard seeds.
8. Transfer salmon, skin side down, to a rimmed baking dish or large sheet pan. Discard marinade.
9. Top with orange slices
10. Roast 15 minutes.
11. Reduce heat to 425 degrees & continue roasting until salmon is cooked through for 5 to 10 minutes.
12. Serve with roasted orange slices & aioli.
