Potato Salad - American Style

  • 2 lbs potatoes, cooked
  • 1/4 cup cider vinegar, divided
  • 1/2 cup olive oil or vegetable oil
  • 1/4 cup sweet pickles, chopped
  • 1/2 cup mayonnaise
  • 1/2 cup chopped fresh parsley
  • 3 hard boiled eggs
  • 1/2 cup chopped green onion
  • 2 stalks celery, chopped
  • salt and pepper to taste



Step 1

Slice potatoes while they are still warm; sprinkle with half of the vinegar. Mix the remaining ingredients and stir gently to coat well. Refrigerate.
