Ingredients
- Optional additions:
- 2/3 cup cornbread mix, yellow or white
- 1 egg
- 1/2 cup milk or buttermilk
- 2 TBSP melted butter, plus extra for cooking
- 2 ounces chopped canned jalapeno pepper, drained
- 1/4 cup cooked corn, coarsely chopped
- 1/2 cup shredded monterey jack cheese
- 2 TBSP chopped pimento, drained

Preparation
Step 1
* In a bowl, whisk together the cornbread mix, milk, egg, and melted butter
* Mix in optional additions as desired
* Place 1/4 TSP butter in each well of an ebelskiver pan
*Place pan over medium heat and warm until the buter bubbles
* Add 2 TBSP batter to each well and cook until bottoms are golden and crispy, about 4-5 minutes
* Carefully flip the pankakes over and cook until golden and crispy, 2-3 minutes
* Remove each pancake from well and transfer to plate
* Repeat with remaining batter
* Makes 10-12 ebelskiver
