Ingredients
- 15 oz. can of black beans, rinsed well, and pureed.
- 3 eggs can use 4 egg whites instead
- 3/4 cups sugar
- 1 Tbsp. vanilla
- 1/2 cup cocoa
- 1 Tbsp. butter melted
- 1 tsp. baking powder
- 1/2 cup flour (any almond, oat etc.)

Preparation
Step 1
preheat oven to 350F
line an 8-inch baking dish with parchment paper.
puree the black beans, its very thick and purees better with a little water and egg, add more eggs as needed to make very smooth puree, with no lumps.
in a mixing bowl, mix butter, sugar, remaining eggs, and vanilla, add black bean mixture. set aside.
sift together dry ingredients and stir into black bean mixture, blend until combined together well.
pour into prepared baking dish, bake until cake tester comes out clean, about 20 minutes.
