You can add leftover meats, bacon, or veggies. Also, substitute regular cheese w/ff cheese and egg beaters for the eggs. Can be baked with or without the pie shell.

Ingredients
- 1/4 cup flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 6 eggs
- 4 oz. shredded monterey jack cheese
- 1 cup small curd cottage cheese
- 1/2 package frozen spinach, thawed and drained
- 4 oz can chopped green chilies, drained
- 1/4 cup melted butter

Step 1
Whisk flour, baking powder, and salt together. Beat eggs till smooth. Whisk in the flour mixture until no lumps remain. Stir in remaining ingredients blending well.
Bake 400 for 15 mins, then reduce to 350 and continue baking until lightly browned and knife inserted into center comes out clean, 40-45 mins.
