Ingredients

  • For the Crisp:
  • 1 cup bisquick
  • 1 Tbs cinnamon
  • 3/4 cup brown sugar
  • dash of salt
  • 4 Tbs of butter
  • For the Bisquit Topper:
  • 1 cup sifted all purpose flour
  • 1 Tbs sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup softened butter
  • 1/4 cup milk
  • 1 egg
  • tip: You can also use the Bisquick drop biscuits recipe
  • For the Filling:
  • 1 1/2 Tbls cornstarch
  • 1/4 to 1/3 cup brown sugar
  • 1/2 cup cold water
  • 4 cups sliced or cubed and peeled peaches or peach pie filling
  • 1 Tbls butter
  • 1 Tbls lemon juice

Step 1

For the Crisp:
Combine bisquick, cinnamon, brown sugar, and salt. Cut in butter until crumbly.

For the filling:
Mix the cornstarch, brown sugar, and water. Add peaches. Cook over medium heat until thickened, stirring to keep from burning to the bottom. Remove from heat and add butter and lemon juice.

For the topping:
Sift together flour, sugar, baking powder, and salt. Cut in 1/4 cup butter until coarse crumbs. Mix the milk and slightly beaten egg. Add all at once to dry ingredients stirring just enough to moisten. Drop by spoonfuls on top fruit. sprinkle with sugar when you take it out of the oven. As an alternative you can use the drop bisquit recipe on a bisquick box.

Pour half of the Peach mixture into an 8 inch round or square baking dish, then sprinkle half the crisp mixture over the peaches. Pour the rest of the peach mixture on top, then the rest of the crisp mix. Top the layers with the biscuit mixture. Bake at 400 for 30 min or until brown.
