Peach tart with almond streusel topping

  • 1 refrigerated pie crust (softened as directed on the box)
  • 4 large peaches
  • 1 teaspoon lemon juice
  • 1 stick cold butter
  • 1/2 cup flour
  • 1/3 cup brown sugar
  • 1/4 cup white sugar
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon pure almond extract
  • 1/4 cup sliced almonds

Step 1

Preheat oven 425 degrees
Press pie dough in a 10 inch tart pan. Peel peaches, slice and set aside. Add lemon juice to sliced peaches. Divide butter in half placing half in food processor and half in a microwave safe bowl. Microwave for 30 seconds or until melted. Mix the flour brown sugar, white sugar, salt, cinnamon and nutmeg and divide in half. Toss half the mix with peaches and melted butter. Add the other half to the food processor along with almond extract and sliced almonds to make the streusel topping. Pulse until crumbled. Pour the coated peaches into the tart shell and top with the streusel. Bake 30 minutes.
