Creamy Parmesan Broiled Tilapia

This was soooo gooood. The recipe calls for fresh dill which I forgot to buy :( so instead of using fresh dill, we sprinkled each fillet with cayenne pepper. That was the only seasoning we used.

Ingredients

  • 3 Tilapia fillets (3 to 6 ounces each)
  • 4 teaspoons light mayonnaise
  • 4 teaspoons non-fat plain yogurt
  • 8 tablespoons shredded Parmesan cheese
  • 4 to 8 sprigs of fresh dill
  • 2 teaspoons garlic powder or garlic salt, divided
  • black pepper, to taste
  • non-stick cooking spray

Preparation

Step 1

Place mayonnaise, yogurt and parmesan cheese in a small bowl, mix with a spoon until well combined.

Cover a cookie sheet with aluminum foil and spray with non-stick cooking spray.

Set oven to broil on high

Place tilapia fillets onto cookie sheet, about 2 inches apart. Divide cheese mixture and spread onto each fillet with a spoon, using the back of the spoon to distribute evenly over fish. Rub dill between your fingers to separate and sprinkle 1 to 2 sprigs worth of leaves over each fillet. Sprinkle each fillet with the garlic powder and black pepper.

Place cookie sheet into oven about 6" below the broiler. Watch fish carefully. Depending on the weight of the fillets, it will take between 5 - 7 minutes to cook fully. When you notice the cheese starting to brown, check fish every 30 seconds to see if it is done. Fish will flake easily with a fork when fully cooked.

Turn broiler off and leave fish in oven about 5 minutes. (this is optional, but will ensure it's cooked all the way and give you a chance to finish the rest of your preparation).

NOTE: Like I said earlier, the only seasonings we used the one time we had this was cayenne pepper sprinkled over the cheese topping & it was great.

NOTE: The cheese seemed to get a bit burnt before the fish was cooked under the broiler. Next time, I will probably bake the fish & put under the broiler at the end just to crisp up the cheese a bit.
