Cauliflower Soup

Ingredients
- 1/2 cup chopped onion
- 3 oz peeled potatoes, diced
- 1 cup water
- 1 cup milk
- 4 tsp flour
- 1 tsp salt
- Dash white pepper
- Dash nutmeg
- 1 head of cauliflower, chopped, cooked till tender
- 2 oz American cheese, diced
- 1 Tbsp chopped fresh parsley

Preparation
Step 1
In a 2-quart pan, combine onion, potato and water, cover and cook until potatoes are tender, 5-7 minutes.
Mix flour and milk until smooth. Stir milk mixture into potato mixture. Add salt, pepper, and nutmeg. Reduce heat to medium. Cook uncovered, stirring occasionally until smooth and thick, 5-10 minutes.
Add cauliflower, cheese, and parsley. Cook, stirring occasionally, until cheese is melted, 2-3 minutes.
(Triple recipe will serve 6.)
