Ingredients
- 2 1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cloves
- 2 teaspoons cinnamon
- 1/4 teaspoon salt
- 1 cup quick cooking oats
- 3/4 cup dark brown sugar
- 3/4 cup sugar
- 1 cup butter
- 2 large eggs
- 2 teaspoons vanilla
- 2 cups grated carrots
- 1/2 cup crushed pineapple, drained
- 1 cup chopped walnuts

Preparation
Step 1
Preheat oven to 350.
In medium bowl combine flour, baking soda, baking powder, cloves, cinnamon, salt, and oats. Mix well and set aside.
In large bowl blend sugars. Add butter and mix to form grainy paste. Ad eggs and vanilla. Beat at medium until light and fluffy. Add carrots, pineapple and nuts. Blend until combined. Add flour; blend on low just until combined.
Drop by teaspoon onto ungreased sheets. Bake 13 - 15 minutes, taking care not to brown. Transfer to cool flat surface.
