Ingredients
- 1 cup water
- 1 cup light raisins
- 1 1/4 cups chopped apricots
- 1/4 cup sugar
- 3/4 cup butter
- 1 1/4 cups sugar
- 1 1/2 tsp. vanilla
- 1 (250g) cream cheese
- 4 eggs
- 2 1/2 cups flour
- 1 1/2 tsps. baking powder

Preparation
Step 1
In a saucepan place water, raisins, apricots and sugar. Bring to boil, reduce heat, simmer for 25 minutes. Set aside to cool.
Cream butter and sugar; add vanilla, cream cheese and beat. Add eggs, one at a time, beating well after each. Sift together the flour and baking powder and add to creamed mixture. Put in greased tub pan and bake at 350F for 1 - 1 1/2 hours
