Ingredients
- 1 egg
- 6 oz frozen crab meat
- 1 cup finely crushed
- Ritz crackers
- Grated rind of 2 lemons
- 1/4 cup finely minced celery
- 1/4 cup mayonnaise
- 2 TB grated Parmesan
- 1/4 tsp garlic salt
- Black pepper to taste
- 2 flounders each split lengthwise & boned & cleaned, heads & tails removed
- Butter, melted
- Paprika

Preparation
Step 1
Beat the egg briskly and add to the cooked, flaked crab, along with each remaining ingredient (except the fish).
When stuffing mixture is thoroughly mixed, divide in half and fill each fish, securing with toothpicks in 4 or 5 places, to seal the seal.
Brush generously with melted butter. Dust in paprika.
Broil 3" from broiler heat about 6 or 7 minutes or till golden brown, each side, turning fish once. Cover fish loosely in foil.
Bake 10 minutes at 375F and serve at once.
