Ingredients

  • 4 slices bacon
  • 1 large onion, chopped
  • 4 cups clam juice
  • 4 cups diced raw potatoes
  • 1-1/2 cups celery, chopped
  • Pepper and celery salt, to taste
  • 1 teaspoon salt
  • 2 tablespoon butter
  • 3 tablespoon flour
  • 4 cups milk
  • 2 cups chopped clams

Preparation

Step 1

Dice bacon and fry gently until tender and done. Add chopped onions and celery; fry until transparent. To this add clam juice and potatoes. Cook potatoes until they are done, but not soft. Add seasonings. In another saucepan mix flour with melted butter and stir over gentle heat, gradually add milk. Add clams to potatoes, allow mixture to come to a boil, then remove from heat. Combine hot milk mixture with clams and potatoes, Stir well. Serves 10-12.
