Pineapple Upside Down Cake

Ingredients
- 1/4 c butter
- 2/3 c packed brown sugar
- 9 slices pineapple in juice
- 1 1/3 c all purpose flour
- 1 c sugar
- 1/3 c shortening
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 3/4 c milk
- 1 egg

Preparation
Step 1
Preheat oven to 350. In a 9-inch square pan melt butter in pan. Sprinkle brown sugar over butter. Arrange pineapple slices over brown sugar. In a medium bowl, beat remaining ingredients on low speed for 30 secs. Beat on high speed for 3 mins. Pour over pineapple and bake 50-55 minutes or until a toothpick is inserted and comes out clean. Immediately turn over and let warm brown sugar drizzle over cake. Serve warm.
