Ingredients
- Pesto Cheese Vinaigrette
- 1/2 cup pesto (jar/purchased)
- 2-3 cloves garlic, finely minced
- 1/2 teaspoon Dijon mustard
- 3 tablespoons fresh lemon juice
- 3 tablespoons red wine vinegar
- 1/4 cup extra virgin olive oil
- 1/2 cup canola oil 1/2 cup finely minced chevre or goat cheese
- Other Elements
- Baby greens, as required
- Sliced cooked or pickled beets, as required
- Toasted walnuts, chopped

Step 1
In a bowl, blend vinaigrette ingredients together. Adjust seasonings.
Toss dressing with baby greens and top with crumbled cheese such as chevre or feta and chopped toasted walnuts.
