  • Pesto Cheese Vinaigrette
  • 1/2 cup pesto (jar/purchased)
  • 2-3 cloves garlic, finely minced
  • 1/2 teaspoon Dijon mustard
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons red wine vinegar
  • 1/4 cup extra virgin olive oil
  • 1/2 cup canola oil 1/2 cup finely minced chevre or goat cheese
  • Other Elements
  • Baby greens, as required
  • Sliced cooked or pickled beets, as required
  • Toasted walnuts, chopped

Step 1

In a bowl, blend vinaigrette ingredients together. Adjust seasonings.
