Ingredients

  • 1 cup pumpkin
  • 3/4 cup raisins or nuts
  • 1 tsp liquid sevia
  • 1/4 tsp stevia powder
  • 1 Tbs lemon juice
  • 2 cups all purpose GF flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/3 coconut oil melted
  • 1 Tbs ground flax seed mixed with 3 Tbs warm water
  • 1/2 cup plain coconut yogurt
  • 1 Tbs vanilla
  • 1 Tbs cinnamon
  • 1/2 tsp nutmeg
  • 1/8 tsp cloves

Preparation

Step 1

Preheat to 350. Mix flour, leavenings, spices, and salt in a bowl. Beat the oil and flax seed together until creamy and then mix in yogurt and vanilla. Mix the stevia, the pumpkin and the oil mixture together until smooth. Fold the dry ingredients into the wet and then fold in the raisins/nuts. Put into an oiled loaf pan. Bake for 45-60 minutes until knife comes out clean.
