Ingredients

  • 2 eggs
  • 1 cup icing sugar
  • 1 tablespoon melted butter or vegetable oil
  • 1/2 teaspoon almond extract
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 cup dried cherries
  • 3/4 cup chopped pecans
  • 1 teaspoon icing sugar

Preparation

Step 1

Grease sides of 8-inch square cake pan, line bottom with parchment paper. Set aside.

In bowl, whisk eggs until light. Sift icing sugar over top, whisk well. Whisk in butter and almond extract. Stir flour with baking powder; stir into egg mixture. Stir in cherries and nuts. Spread in prepared pan.

Bake in centre of 350 oven for about 25 minutes or until golden and set. Let cool in pan on rack. Run knife around edges, cut into squares. Dust with icing sugar.
