Almond Apricot Squares

Ingredients

  • 3/4 cup packed dried apricots
  • 1/4 cup butter
  • 1 cup all-purpose flour
  • 3/4 cup sugar
  • 2 tablespoons 1% plain yogurt
  • 2 eggs
  • pinch salt
  • 1/2 cup slivered almonds

Step 1

IN small saucepan, combine apricots with enough water to cover. Cover and bring to a boil; remove from heat. Let stain 1 minutes; drain; let cool. Chop finely; set aside.

In bowl and using pastry blender, cut butler into flour until mixture resembles fine crumbs. Stir in 1/4 cup of the sugar and yogurt until combined. Press into lightly greased 8" square pan. Bake in 350 oven for about 20 minutes until golden.

Meanwhile, beat together eggs, remaining sugar and salt just until combined. Stir in apricots. Pour over base, sprinkle with almonds. Bake in 350 oven for about 30 minutes or until set and golden brown. Let cool in pan.
