Ingredients

  • 6 lb venison leg or shoulder
  • 1/2 c fat
  • 1/2 c hot water
  • 2 tbsp vinegar
  • 1/2 c celery-chopped
  • 1 onion- chopped
  • 1 carrot-chopped
  • 1 tart apple chopped
  • 1 tbsp lemon juice

Step 1

Wipe venison with damp cloth and grease, rub with flour and sauté in fat till well browned. About 30 minutes. Add hot water, vinegar and cook covered two hours. One half hour before meat is done cover with mixture of celery, onion, carrot, apple and lemon juice.
