Ingredients

  • 3 celery sticks (chopped)
  • 3 cloves garlic (crushed)
  • 1/2 red pepper (chopped)
  • 1/4 red onion (chopped)
  • 2 boneless skinless chicken breasts (cubed)
  • 1 10oz can of cream of mushroom soup
  • 10 oz water
  • 10 oz parmesan cheese
  • frozen peas
  • white wine
  • celery salt
  • pepper
  • Linguini noodles

Preparation

Step 1

Saute the celery , garlic, red pepper and red onion in extra virgin olive oil. Add celery salt and pepper to taste. Add 1 cup of wine, add chicken and simmer slowly, until chicken is cooked thru. May need to add additional wine –if this gets dry.
In a separate bowl combine soup, water and parmesan cheese. Mix well and add to sauté mixture (when it’s cooked) simmer slowly for 10 minutes, stirring occasionally
Now time to cook the pasta
Add frozen peas in the last 2 minutes of simmering
Combine all ingredients ----ENJOY with your favourite RED WINE
