Shrimp cooked in two ways smothered with goat cheese under a tomato and jalapeno relish, this appetizer is to die for, don't forget some bread to soak up the juices.

Ingredients

  • Half of a roma tomato
  • Half of a jalapeno(seeded)
  • Goat Cheese 6oz
  • chopped green onion
  • 2 shallots
  • Cayenne pepper tsp
  • salt and pepper
  • 8 jumbo shrimp

Preparation

Step 1

1. Preheat oven at 450
2. Finely chop the shallot, jalapeno, and tomato, place on the stove at medium heat, until soft. Add shrimp about two minutes in, spice with cayenne pepper and salt. 5Min total
3. Transfer the ingredients to a baking dish you can serve it in, bake for about 10-12 minutes or until the relish is starting to bubble.
4. Sprinkle some chopped greens onions on top and cracked black pepper.
