Ingredients
- 4-5 lb. standing rib roast
- 16 cloves garlic, peeled
- 1 Tbsp. chopped fresh thyme plus 12 sprigs
- 2 tsp. salt
- 1 tsp. black pepper
- 1 tsp. seasoned salt
- 2 Tbsp. olive oil

Preparation
Step 1
Preheat oven to 400F
Place thyme on roasting rack and then place roast, bone side down on top. With a sharp knife, make 16, 1/2-inch deep slits in the meaty side of the roast. Insert one clove of garlic into each slit and pinch closed. Combine remaining ingredients in a small bowl to make a paste. Rub the paste on all side of roast. Roast until desired temp, about 45 minutes for medium-rare.
Let stand 15 minutes before carving
