French Onion Soup

Ingredients
- 4 large yellow onions, about 1 1/2 pounds
- 1/4 cup butter
- 2 teaspoons sugar
- 2 tablespoons flour
- 1/8 teaspoon pepper
- 1 teaspoon dried thyme
- 2 cloves garlic, crushed
- 5 cups beef stock or broth, 4, 10 oz cans
- 1/2 cup dry white wine
- 1/4 cup rye whiskey
- 2 tablespoons parsley
- 8 slices french bread
- 1 1/2 cups grated swiss or mozzarella cheese

Preparation
Step 1
Peel onions and slice thinly. Put butter in large skillet, heat over moderately-high heat until butter melts. Add onions and saute stirring frequently with wooden spoon until light golden brown, about 10 minutes. Combine in separate bowl the sugar, flour, pepper, thyme and garlic. Sprinkle over onions. Continue frying and stirring constantly until all traces of flour disappear, 3 - 5 minutes. Remove from heat.
In 4 L sauce combine stock, wine, rye and parsley. Gradually add onions to broth stirring constantly. Place on medium-high heat, bring to boil stirring constantly. Reduce heat to low and simmer for 45 - 60 mintues.
To serve: Pour soup individual heat proof bowls. Toast french bread. Arrange on top of soup; sprinkle with cheese. Bake at 425 until cheese melts and turns golden.
